Great Grandma JoHanna’s old fashioned CHICKEN SOUP recipe is still the best!

Place chicken bones, or whole chicken in large soup pot.

Add 4 large peeled carrots, 4 stalks of celery, 1 large whole onion, 2 large parsnips, 1 large parsley root with leaves, 1 whole garlic - split and peeled, 3 T. kosher salt.

Cover with water and bring to a boil. Skim off scum from top of soup. Simmer soup for 1 hour with cover. Let sit in the refrigerator for one day before skimming soup.

Natural Remedies for Children's Health

Stephanie Richards, R.D., M.P.A.

The recommendations in this section are based upon my experience raising four children who are at this writing ages 14-19 years old. I rarely take the children to the doctor, treating my family almost exclusively with natural products. Fifteen years ago I was told by some that I was compromising my children’s health giving them echinacea and goldenseal for sore throats. Today I am considered a maven in the natural health field.

To ascertain what nutrients your child may be missing from his or her diet, complete the Symptom Assessment checklist. All children should be taking a multi-vitamin mineral complex without iron. Many children do not like taking pills. Instead try giving them juice from the fruit of the mangosteen. The mangosteen is a highly concentrated source of xanthones, a powerful antioxidant which will help to boost immunity during the cold and flu season. It has a sweet, tart taste that many love.

For the flu season, I advise to have the following on hand. They will shorten the duration and the severity of the flu.

Oscillococcinum
This is to be taken at the very first sign of achiness. This is a homeopathic remedy that is a must have for the flu season. www.boiron.com

Nutriferon
Nutriferon is an alternate with oscilloccoccinum during treatment for the flu. This is excellent for anyone who has an already compromised immune system and needs extra help. Excellent to use as a preventive during the cold season.

Mullein Tea
Excellent for croup. For a reputable source, www.blessedherbs.com

Echinacea
Sore throats respond well to echinacea, either as a homeopathic remedy, a tea, or in a capsule. Use Defend & Resist Complex dissolved in hot water as a tea. Add honey for extra soothing and to sweeten.
